做(zuò )法(fǎ ):春笋切成片后加(jiā )少(shǎo )许盐(yán )捞出(chū )后用清(qīng )水(shuǐ )浸泡,生姜(jiāng )切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放(fàng )入生姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。 -
