做法(fǎ ):洗净宰好(hǎo )鲫鱼,洗(xǐ )净淮山和薏(yì )米。用(yòng )清(qīng )水把陈(chén )皮泡软,拍裂一小(xiǎo )块姜,热锅,用姜块在锅上擦(cā )一遍,放两勺油,待油(yóu )六成(chéng )热下(xià )鱼,煎至微黄。煮沸瓦煲里的清水,放入(rù )煎煮好的鲫鱼和其他材料(liào ),武火煮(zhǔ )沸,转中小火煲一(yī )个(gè )半小时(shí ),下盐调味即可品尝。 -
