做法:洗(xǐ )净宰好鲫(jì )鱼,洗净淮山和薏米。用清水把陈皮泡软(ruǎn ),拍裂一小块姜(jiāng ),热锅,用姜块在锅上擦一遍,放两勺油,待油(yóu )六成热下鱼(yú ),煎(jiān )至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其(qí )他材料,武火煮(zhǔ )沸,转中(zhōng )小火煲一个半小时(shí ),下(xià )盐(yán )调(diào )味即(jí )可品尝(cháng )。 -
