做法:洗(xǐ )净宰好鲫鱼,洗净(jìng )淮山和薏米。用清水把陈(chén )皮泡软,拍裂(liè )一(yī )小块姜,热锅,用姜块在锅上(shàng )擦一遍,放两勺油(yóu ),待油六成热下鱼,煎至微(wēi )黄。煮沸瓦(wǎ )煲里的清(qīng )水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和其他材(cái )料,武火煮沸,转中小火煲(bāo )一(yī )个半小时,下盐调味即可品(pǐn )尝。 -
