做(zuò )法:春笋切成片后加少许(xǔ )盐(yán )捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春(chūn )笋,盖上锅盖(gài )大(dà )火煮(zhǔ )开后转(zhuǎn )中(zhōng )火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时盖(gài )上锅盖焖(mèn )。 -
