做(zuò )法(fǎ ):洗(xǐ )净宰好鲫鱼,洗净淮山和薏米。用(yòng )清水把陈皮泡软,拍裂(liè )一小块姜(jiāng ),热锅(guō ),用姜块在锅上擦一(yī )遍,放两勺油(yóu ),待油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其(qí )他材料,武火煮沸,转中小(xiǎo )火煲一个半小(xiǎo )时,下盐(yán )调味(wèi )即可品尝。 -
