做(zuò )法:洗净宰好鲫鱼,洗净(jìng )淮(huái )山和薏米。用清水把陈(chén )皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上擦一遍,放两勺油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里(lǐ )的清(qīng )水,放入煎煮好的鲫鱼和(hé )其他(tā )材料,武火煮沸,转(zhuǎn )中(zhōng )小火煲(bāo )一个半(bàn )小(xiǎo )时,下(xià )盐调(diào )味即可品尝。 -
