做法:洗净宰好鲫(jì )鱼,洗净淮山和薏米。用清水把(bǎ )陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜(jiāng )块在锅上(shàng )擦一遍,放(fàng )两(liǎng )勺油,待油(yóu )六成热(rè )下鱼,煎至微(wēi )黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其他材(cái )料,武火煮沸,转(zhuǎn )中小火煲(bāo )一个半小(xiǎo )时,下盐调味即可品尝。 -
