做法:春笋切成(chéng )片后加少许盐捞(lāo )出后用清(qīng )水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分(fèn )钟左右。再加(jiā )入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀(yún ),加入少量清水半掩(yǎn )住春(chūn )笋,盖上(shàng )锅盖大火(huǒ )煮开后转(zhuǎn )中火。煮到水快熬干的时候(hòu )加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。 -
