做(zuò )法:春笋(sǔn )切(qiē )成(chéng )片后加少许盐捞(lāo )出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再(zài )加入生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加入少(shǎo )量(liàng )清水(shuǐ )半掩住春笋,盖上锅盖(gài )大火煮开后(hòu )转中火(huǒ )。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。 -
