做(zuò )法:春笋切(qiē )成片后(hòu )加少(shǎo )许盐捞出(chū )后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段翻炒1分(fèn )钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖(gài )大火煮开后转(zhuǎn )中(zhōng )火。煮到水快熬干(gàn )的(de )时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖。 -
