做法(fǎ ):洗(xǐ )净宰好鲫鱼(yú ),洗净淮(huái )山和(hé )薏米。用清水把陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜块在锅上(shàng )擦一(yī )遍,放两勺油(yóu ),待油六成热下鱼,煎至(zhì )微黄(huáng )。煮沸瓦煲里的清水,放入(rù )煎煮好的鲫鱼和(hé )其他材(cái )料,武火煮沸,转中(zhōng )小火煲一个半小时(shí ),下盐调味即可品尝。 -
