做法(fǎ ):洗(xǐ )净宰好鲫鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软,拍(pāi )裂一(yī )小(xiǎo )块姜,热锅,用姜块在(zài )锅上(shàng )擦一遍,放两勺油,待油(yóu )六成热下鱼,煎(jiān )至微(wēi )黄。煮沸瓦煲里的清(qīng )水,放(fàng )入煎煮好的鲫鱼和其他材(cái )料,武(wǔ )火煮沸,转中小火煲一个半小时,下盐(yán )调味即可品尝。 -
