做(zuò )法(fǎ ):洗净(jìng )宰好鲫鱼,洗净淮(huái )山和薏(yì )米。用清水把陈皮泡(pào )软,拍裂一小(xiǎo )块(kuài )姜,热锅,用姜块在(zài )锅上(shàng )擦一遍(biàn ),放两勺油,待油六成热(rè )下鱼,煎(jiān )至(zhì )微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其他材料,武火煮沸,转中小火煲一个半小时,下盐调味即可品尝。 -
